Reads the field slug a ColumnEntry names, whichever of its two
shapes it is — the one piece of a ColumnEntry every order/visibility
helper that doesn’t otherwise care about width/pin/hidden overrides
needs (listView/listViewUrlState.ts’s view-baseline diff, resolveListViewQueryState’s
legacy bare-slug consumers).
